It all depends on the spices... a friend of mine makes great elk jerky - starting with shooting the elk.

Jerky has to be smoked (though you can dehydrate it at home).....but!

I do have a recipe that uses cocoa powder in the spice mix, which would sorta make chocolate beef jerky.
