You know Terry she just calls it duck! So I do not know the name of the dish but it is really delicious. Someday I will have to get the recipe from her. However that is usually a little frustrating as she does everything by memory and tasting as she is cooking.

I had Duck in (what I am told) is the best restaurant for Duck in China (a lot of the government types apparently eats there) when I was in Beijing and I was rather surprised that it was not greasy at all.
