I've never had to deal with a human attacker, only with dog attacks. I wonder if it's possible to use Wing Chun to defend against an attacking dog in the street.

Try it out. I doubt sincerely that this was designed to fight dogs, so you might be better off creating your own martial arts system for fending off dogs.
EDIT: Just realized I need to clarify myself, do NOT beat a dog in order to try it out! Actually thinking about it I guess you just have to learn WC, then wait for a dog to attack you.
