I can learn from monkey see-monkey do. But I'm not going to learn anything deeper than that.
What is he doing? Why is he doing it? How is he doing it? These questions aren't really answered by the video.

These are the kinds of videos I watch for BJJ. He describes the concepts and principles behind the techniques, shows the techniques, shows the if-then-else statements for when you would do technique 1, 2, or 3; and so on.
Or this video:
I watched this guy a lot when I did TKD. In this video, he breaks down the twist kick. How to do it right, how to fix it if its wrong, when to use it, and some examples of it being used.
Or if you want to focus on kata and solo drills, how about this video

This is Kukkiwon's official video of Taegeuk 1. It shows the form at speed, in slow motion, and then breaks down the important techniques and concepts. I do feel this does a good job of showing the
what to do, but not necessarily the
why or the
when to use them, or
how to use them against an opponent.
I think the video in the OP is a great demonstration of a form (or of multiple drills). I don't think you're going to learn much from it unless its a supplement to training in that style.
