Putting on fat when going up a weight class

It is certainly not the beef that can be an issue. Huge non-grain buns and ridiculous amount of condiments can be a problem however.
I get some nice lean beef patties and throw them on the grill. Usually I don't go to crazy on condiments. Typically, they consist of ketchup, lettuce, pickles, tomato, and a slice or two of cheese (American, cheddar or Swiss) The wife usually makes a salad.
 
Weight cutting is a skill. I did powerlifting and my biggest cut was going from 160 to 128 in just over 30 days. I lost maybe 10% strength but I cut two weight classes. You would be surprised at how much of your weight is water. Gaining muscle and moving up is definitely a much longer process. I would not recommend large cuts. To me it was a good accomplishment but probably not the healthiest.

Read your ketchup bottle. The highest calories of all the common condiments.
