Different groups do 1 step sparring for different reasons.

What is the reason or purpose you do one step ssparring?

I have couple of reasons.

1) My teacher is doing these and for that is one reason I do also
2) My students like to train 1-step sparring
3) It's safe way train and students will learn how to control their techniques
4) Students will learn how to be more creative, they have show their "own" one step sparring techniques in higher belt tests
5) It will help my students with poomsae training.

These are some of my reasons :)

Very nice Markku, in fact I love one steps too and as you wrote they are a great aid in teaching self control. We must realize one spets are only a tool, an arrange set or scenario where we can practice the basics.
