Knowing if it's a good Kung Fu School

i think the best way to observe the quality of the school is to observe the students look at guys that have been there for a while if they impress you with there skill the school must be capable of teaching good kung fu

In general the school's methods should:

1.) Improve your overall health.
2.) Develop fighting skill.

It really depends upon what you want. There's many styles with different priorities of training to choose from.
