kicking the knee

These kicks are stances breakers, not joint breakers.
I took a second look and you are correct about it not being aimed at the knee. I'll have to keep searching for one that targets the knee.

If you use

- one hand to pull your opponent's leading arm,
- another hand to punch on his face,

at the same time. you stomp on his knee; you will have better chance to make your knee attack work.

Either that or learn timing and time your opponent as he plants his foot and then kick. Either way works very well. Both ways take a lot of practice.
