Let's see if we are on the same page here. In your clip, you are talking about the principles of:

1. block and strike,
2. single switching hands,
3. double switching hands (single switching hands + block and strike).

1. Block and strike:

- You punch right hand.
- Your opponent blocks it.
- Your right hand re-block his blocking, and
- punch back with your left hand.

2. Single switching hands

- You punch right hand,
- your opponent blocks it.
- You use left hand to re-block his block,
- free your right hand, so your right hand can continue punch.

3. Double switching hands:

- Continue from "single switching hands".
- If your opponent blocks your right punching hand again,
- You use your right hand to re-block his blocking, and
- punch your left hand.

Of course after "single switching hands", you can use your left hand to re-block his blocking, free your right hand, and punch your right hand again. When you do that, you are using "single switching hands" back to back.

Hi..The drill is based on the attack is both defensive and offensive at the same time. Wing Chun in general works this way. When someone tries to stop or block your attacked you simply move around the obstruction and continue your attack. this drill show a simple way to do that using angulation.
