Yea sometimes I still practice the poomsae from ITF & WTF, but in the ITF. I only made it to wonhyo (probably my favorite itf form) and Koryo (favorite wtf form)
As far as only legs, I think it varies based on dojang. But in the Olympics I was always told you score more for kicks than punches so they specialize in that area.
I remember some of the training sessions we would only be allowed to use legs except to block (of course)
