Can somebody recommend a wing chun school in Hong Kong?

Having never been there, no I cannot recommend a specific school. But Hong Kong is a stronghold for systems like Wing Chun. I doubt you could throw a stone without hitting a Wing Chun school or sifu. Look around and I am sure you will find something.
