I have trainined in TKD and Shotokan ...but never any of the Chinese styles, so I don't know what to expect and I really do not care to look like a complete buffoon! :)

Do I remove my shoes? Do I bow? etc. etc.

I don't think most instructors will expect you to know all the edicate upon visiting the class. Also, it varies between instructors. The instructor is called Sifu. If your not sure, just ask, thats the best rule of thumb.
